Chef’s knives have a broad blade that curves upwards towards the tip to allow the knife to rock for fine mincing. The spine is thick to add weight/strength for a greater cutting force. Blades are manufactured using high quality 420 stainless steel that has added Molybdenum, which gives the steel excellent edge retention, high durability and exceptional rust resistance.
