Yes, you can use a carving knife for raw meat. They are ideal for cutting long, even slices. You cannot use them for cutting bones, you would need a Butchers knife for this task.
A carving knife offers more versatility than an electric carving knife. Electric knives can easily slice through large joints, they cannot however, navigate easily around bones. They can also tear the meat which can be messy and mean your slices are less uniform. It’s harder to get the most meat from a joint using an electric version.
